Acadian Sturgeon and Caviar is the world leader in bringing back the sturgeon population, and is the world’s only company producing caviar from wild sturgeon. It was one of the three finalists in Canada for the Culinary Tourism Awards in 2018, offering as world unique experience its Sturgeon Safari on Saint John River and Caviar Academy as an ultimate culinary experience.
They offer different experiences for different audiences and interests, like a tasting experience of 7 courses prepared by a professional chef and served together with education about food production, sustainability, etc.; or a caviar safari happening outdoors in the Saint John river to learn about fishing and sustainability.
